I've created my first quick and dirty video (AVI) just to see what I'd get.
Playing time is 2:48.
File size is 39 MB.
Is this indicative of the file sizes to be created by HyperCam? Or, is there some setting I've missed that will create much smaller files?

Sure there are compression settings.

To achieve better compression you can use another codec, like free xvid (http://www.xvid.org/) for example.
Or set less framerate or more compression rate.

I really have no desire to learn all about codec, compression, etc.
Can I assume the default settings are probably best overall? If so, the file AVI size is going to be huge and probably unusable for my purposes.
I'm hoping for something I can post on the web that folks can watch online.

The default settings with codec - Microsoft V1 are not very good for your purposes.
If gives comaprarative good quality but requires big HDD space, though can be easily edited.
The reason why it is default ones - that Windows System guaranteed has this codec.
To get better results I would suggest you to use some third party codecs.
